Zbojnícka Koliba

Wood, wool and woodsmoke define the place. Zbojnícka Koliba is a cluster of timber buildings set in Oravská Jasenica, in Slovakia's Žilinský region, built around a guest house, chalets and apartments finished in a traditional style. Rooms come fitted with Wi-Fi, television and an en-suite bathroom, and double rooms take an extra rollaway bed for a third guest. The kitchen works from local staples: bryndza dumplings made with sheep's cheese and bacon, garlic soup and crisp pork knuckle. Highland cattle graze the pastures around Orava, and their meat, low in saturated fat and slow-cooked to hold onto it, anchors much of the menu. A restaurant, bar and wellness spa round out the property, along with space for weddings and conferences. It is not a polished city hotel. The mood leans toward folk tradition and unhurried meals, sheepskin and open fires standing in for minimalism. You can settle in for a coffee or a full dinner without booking anything beyond a table. Rooms are simply furnished rather than designed as showpieces, and the pace of the place matches the food: slow, direct, without much ornament. Staff run the restaurant and accommodation from the same reception line, and the whole operation stays open daily from morning into the evening.
