Aïre de Olive

Built as a beachfront hotel in Isla Verde, Aire de Olive was designed around raw wood, ceramics, and a deliberately unpolished finish rather than gloss. The result is eighty suites arranged over a stretch of San Juan sand, each one furnished with timber, stone, and neutral tones meant to feel handmade rather than manufactured. The Habitat suite pairs a king bed hewn from French oak with a glass-walled shower as its centrepiece. The Agua suite occupies the top floor, facing the Caribbean directly, and adds a private plunge pool set into a small courtyard garden. It is a compact footprint by resort standards, but every room carries a sea or city view. Downstairs, the kitchens work the same cross-cultural line as the architecture: AWWA serves Peruvian ceviche and raw fish dishes, while Kumo cooks over open fire with Japanese technique, both looking out toward the water. A rooftop bar, styled with a Japanese hand, sits above it all. Wellness runs on a rotating schedule of yoga, mat Pilates, and dance classes taught by local instructors, open to guests and day-pass visitors alike. You can hear the pool from the upper suites most afternoons. Day passes let non-guests use the pool and beach access without booking a room, a detail that keeps the property tied into its own neighbourhood rather than sealed off from it.
