Chablé Yucatán

Arrival at Chablé Yucatán means driving through jungle near Chocholá to a former henequen hacienda, its old engine room now home to Ixi'im, the resort's signature restaurant. Casitas run 2,152 square feet, each with a king bed or two queens, a private pool, and an outdoor moon shower set among dense vegetation. Villas scale up from there: the Family Villa holds two bedrooms across 4,090 square feet, the Presidential Villa spans 8,010 square feet with three, and the Royal Villa, the largest at 10,000 square feet, sits behind walls that once belonged to the hacienda itself. It is a compact universe of stone and shade. Guests can cycle the property's paths, join a beekeeping session with native melipona bees, or take a dip in one of the region's cenotes. Ixi'im, run by chef Luis Ronzón under corporate chef Jorge Vallejo, holds one of the largest tequila collections anywhere, with 3,435 bottles and a label dating to 1845. Casa Principal, the former hacienda owner's house, now holds a bar, library, and the property's art collection.
