Set along the waterfront at Baie Ste Anne on Praslin, Chalets Côte Mer looks across the bay to La Digue. The property has been run by one family since the 1960s, and the kitchen still follows recipes from Rene, its founder and former chef, who retired in 2016. Rooms come in three forms: Ocean View Rooms of 45 m² with private balconies and king beds, Waterfront Suites of 80 m² with kitchenette and living room for families, and two- or three-bedroom villas of 180 m² set on 500 m² plots with their own BBQ area. Each villa room has an ensuite bathroom. It is a family operation, plainly run. An infinity pool sits above the water near the restaurant and bar, and snorkelling gear is free to guests exploring the reef just offshore. The restaurant works from a tropical garden hand-planted by Bernadette, the co-founder, with a local farmer and fisherman supplying whatever the garden cannot. You can hear the kitchen team, led by Chef Philip, folding French technique into Creole dishes most evenings. The hotel keeps its footprint deliberately light: water runs by gravity from tanks, solar power heats showers, and towels change every two days rather than daily. Breakfast runs early, and the bar stays open through the day.
