Hōseki is the estate's Japanese restaurant, serving lunch and dinner to all guests and breakfast to lodge guests only. The name translates to "jewel", a homage to Laurence Graff. Virgil Kahn is Head Chef.
The menu is built for sharing. Signature dishes include togarashi robata eggplant with fermented chilli soy, soft-shell crab with doubanjiang aioli and ostrich tartare with tamago. Dessert is a sweetie pie with raspberry sorbet and confit blood orange, and an omakase-style tasting menu is also offered.
For lodge guests it doubles as the breakfast room, unless they choose in-lodge service. Suggest it for a longer, slower dinner with a group willing to share plates.
