Just under two hours from Katamama, Jatiluwih's terraced hillsides form a UNESCO World Heritage site, farmed for centuries under the Balinese belief of Tri Hita Karana, which links spirit, people and land. A local farmer, Pak Sweden, leads an early-morning walk of about one hour through the paddies, explaining the shrines set at each field's edge and pointing out subak, the island's traditional water-sharing system still used to irrigate the rice. The route passes a waterfall where swimming is optional. Afterwards, guests eat lunch at Pak Sweden's home, overlooking the green slopes, where his wife serves nasi campur made with the region's heirloom rice, vegetables, meat and chilli sambals.
