L'Auberge Basque

Facing Mount Larrun across open lawn, L'Auberge Basque occupies a quiet patch of ground in Saint-Pée-sur-Nivelle, seven kilometres inland from Saint-Jean-de-Luz and the Basque coast. It is a small hotel, built around a kitchen rather than a view, though the view holds its own. Rooms, suites and apartments are fitted with a coffee machine, a rain-style shower head and a small speaker for music. Furnishings run plain and current rather than rustic. The restaurant is the point of the place: a kitchen brigade works service in coupure shifts, turning out French cooking built on regional produce, with a cellar kept and stocked by the team itself. Breakfast is cooked to order each morning, not laid out cold. You can hear the kitchen's rhythm from the dining room at busy hours, the pass calling orders, the room otherwise low-key and unhurried. The inn keeps Relais & Châteaux affiliation, which shows in the staffing structure — a maître d'hôtel and assistant running the floor, a sous-chef standing in for the chef when needed. Grounds are modest and green, set apart from the road. It suits a stay built around the table more than the pool or spa, though guests use both. Checkout runs to midday.
