Maison Pavlov

Set behind a gate at the end of a walled garden, Maison Pavlov keeps its stone chartreuse quiet even with a tram stop a minute's walk away. The building was fully renovated in 2021 by Mary Henchley and Maxime Rosselin, who turned it into an eight-room hotel and restaurant on the edge of Le Bouscat, close to Bordeaux's old centre. Rooms run from 25 to 36 square metres, each with Wi-Fi, a minibar, a hairdryer, and a yoga mat rolled by the window. Several connect for families, and children under five find a small surprise waiting on arrival. The kitchen leans on its own garden for herbs, flowers, and fruit, and takes honey from hives kept in the nearby Bois du Bouscat. At lunch the menu turns bistronomique; by evening it shifts to a gastronomic table, open Tuesday to Saturday. You can eat on the terrace by the heated pool, open from May to mid-October, or book time in the spa, which uses maritime pine skincare sourced from Cap Ferret. A concierge arranges private tastings in the garden with an in-house sommelier, and day trips to the Bassin d'Arcachon for oysters and dune views. Reception runs around the clock.
