Stone is the material here, not a motif applied to it. Millstone Cave Suites occupies a hilltop above Uçhisar, its 26 rooms cut into and built from the region's characteristic rock, with several looking directly onto Goreme, Red Valley and Pigeon Valley. Furniture is aged teak, made in Indonesia and set against the pale stone walls; bathrooms carry standalone tubs, and each room keeps a kettle, minibar and flat-screen television alongside the more textural details. Room types range from a Standard Room up through suites with balconies, hot tubs and private pools, including a Grand Cave Pool Suite. Two restaurants anchor the food side: Mill Italy, serving handmade pasta and stone-oven pizza on a terrace with a view, and Millocal, built around Anatolian recipes and local ingredients. You can watch hot air balloons rise from the terrace at breakfast, a fixture of the property's sunrise service. Beyond the rooms, the hotel runs valley hikes, horse riding, ATV and jeep tours, and private tours to the underground cities and rock churches nearby. A sunset picnic among the valleys and occasional wine tastings in the garden round out the programme. It is a compact stay, built into a landscape most hotels can only look at from a distance.
