Nina Trulli Resort

Built from trulli and lamie, the conical stone structures once used by Puglia's farming families, Nina Trulli Resort keeps its rural bones intact rather than dressing them up. Seven rooms make up the whole property: six carved into trulli, one set inside a stone lamia that still shows its old rural character. Rooms run from 20 to 35 square metres, each with a private patio and its own geometry, since no two trulli are built alike. Meals move outward from the kitchen garden. La Farm, seating around 40, serves lunch and dinner among the vegetable beds; Orto, the fine-dining room helmed by chef Cinzia Mancini, holds just 12 covers and changes its tasting menu monthly. Breakfast draws on ancient grains, ricotta and honey from the estate. It is a short drive to the sea. Polignano a Mare's grottoes, Alberobello's UNESCO trulli and the white town of Ostuni all sit within easy reach, and a catamaran excursion runs from the coast nearby. You can hear little beyond birdsong and wind through the olive groves from the patios. Children under ten are not the resort's focus; quiet is. Check-in runs from 3pm.
