Selva Negra Ecolodge

Mist settles over the water most mornings, and the sound that carries across it is birdsong: Selva Negra counts over 250 species, including the quetzal. The estate sits in the cloud forest highlands of Matagalpa, built around a working coffee and cacao farm called La Hammonia and a small lake ringed by trees. Guided tours walk through the coffee and cacao plots, past greenhouses and a cheese house, tracing how the crop moves from plant to cup. Night walks find red-eyed frogs and other creatures that only show themselves after dark. Deer and howler monkeys move through the forest by day, and horseback rides cross the coffee fields and stables at a slower pace. Rooms range from a standard cabin for two to the five-bedroom Viejo Otto chalet, which sleeps up to twelve across two floors, with a lake view or garden view depending on the block. The restaurant, La Laguna, faces the water and serves food grown on the estate: vegetables, tropical fruit, honey, cacao, and the lodge's own coffee. Roy's Bakery adds pastries made with farm cacao, vanilla, and eggs. It is a quiet base built into a working landscape, not a resort dropped onto one.
