Evenings begin at seven with aperitifs, when guests meet the hosts and each other before being seated for dinner around half past seven. The menu is table d'hôte, a daily trust-the-chef selection cooked only for those staying that night. Dietary requirements need to be flagged in advance, with a simple guide: tell the hosts what you'd tell a friend hosting a dinner party. Guests staying in the Bush Chalets or Bush Lodges can instead request a three-course platter or a barbecue plate, served privately in their suite, provided it's ordered by nine that morning.
