The centrepiece is a seven-metre cypress-wood sushi counter facing a garden view, set inside a dining room decorated with a flower motif that nods to Japanese tradition. Hanagatami serves five categories of cuisine: sushi, tempura, teppan-yaki, kaiseki and sumibiyaki, the last grilled over ubame oak charcoal sourced from Wakayama. Pairings follow suit, with sushi matched to Japanese sake, sumibiyaki to sweet potato shochu, teppan-yaki to red wine and tempura to champagne. The dress code is smart casual, and the restaurant keeps separate hours on weekends. It stands among the Ritz-Carlton Osaka's dining choices alongside its Michelin-starred French room, La Baie.
