Villa Mittermeier stands just outside the Würzburger Tor, one of the old gates into Rothenburg ob der Tauber's walled centre. The town's cobbled lanes and towers are a short walk away. Inside, the hotel keeps its rooms plain and current: desk, television, en-suite bathroom, free Wi-Fi throughout. It is a small, independently run house rather than a chain property, still overseen by owner Christian Mittermeier.
The kitchen is the other draw. Restaurant Mittermeier holds a Michelin star and a Michelin Key, served in a dining room that drops the formality of white gloves and silver domes for what the house calls casual fine dining. Chef Thorsten Hauk builds tasting menus around regional ingredients — carp, venison, white asparagus — with wine pairings poured tableside. You can taste the connection to place directly: the hotel farms its own vineyards along the Tauber under organic methods, without spray chemicals, bottled as Tauberhase wine. A resident apiary of 125 bee colonies works the same vineyard rows, and their honey turns up at breakfast and in the kitchen's cooking.
