Amari by Vineet is the resort's Indian restaurant, its interiors done in pinkish, earthy tones drawn from India's colour palette. The name comes from the Sanskrit amar, meaning immortal or eternal, and the menu bridges the flavours of India and Mauritius. Behind it is chef Vineet Bhatia, who won his first Michelin star at Zakia in London in 2001, a second for his own restaurant Rasoi in London in 2006, and a third for Rasoi by Vineet in Geneva in 2009. Dishes are subtly spiced, with sumptuous textures and a contemporary edge. Open evenings, seven till half past ten.
