Set on a private peninsula between a calm lagoon and the open Indian Ocean, PRIME occupies one corner of a resort built along a wide crescent of white sand in Flacq, Mauritius. The restaurant works as a contemporary grill, its kitchen turning out Mauritian seafood alongside Australian beef under the care of its grill-masters. It is a steakhouse first. The setting does the rest of the work: tropical gardens and coral reef lie within reach of the terrace, and the ocean air carries into the dining room through open sides. For gatherings, PRIME offers a private Chef's Table, with wine pairings and personalised service laid on for celebrations.
