Nelayan takes its name from the Malay word for fisherman, a nod to Fisherman's Cove, the restaurant that inspired it. Lunch runs through a mix of Asian and Western dishes, while dinner turns to seafood, prepared by Chef Wai, the same chef behind Fisherman's Cove, who favours sustainably caught fish and ingredients bought fresh rather than stored.
