Meals are taken in the main dining room, its windows facing the Waimea Estuary. Guests start with small savoury bites and a drink before dinner, then move through a three-course meal, each course matched with a New Zealand wine. Breakfast is served daily in the same room and is included, along with the evening meal, in the lodge's rates. There is no menu to choose from night to night; the kitchen sets the courses and pairings. The estuary view stays constant through the seasons, changing only with the light and tide.
