Saffire Freycinet

Guests arrive at Coles Bay to a stretch of Tasmania's east coast where the Hazards Mountains rise straight off the water. Saffire Freycinet sits on that shoreline with 20 suites and pavilions, each angled for its own view of Great Oyster Bay. Luxury Suites run to 80 m² in Tasmanian timber; Signature Suites add a deep bath set to face the water. Private Pavilions go further, with a separate kitchen, dining room and their own plunge pool in a walled courtyard. From late 2026 a three-bedroom villa called The Jewel joins them, with an 18 m infinity pool and 800 m² of indoor and outdoor space. Days follow the tide and the season. You can wade into a working oyster farm on Coles Bay for a guided harvest and tasting, or walk the boardwalk loop at Cape Tourville, where the track edges cliffs above Wineglass Bay. Fur seals gather on offshore islands; dolphins and, in season, migrating whales pass close to shore. On land, a one-hectare sanctuary shelters Tasmanian devils as part of an active breeding programme. Palate Restaurant serves three meals a day, its menu rewritten daily around what came off the boat or out of the paddock that morning, with the Hazards framed in the window. All meals, drinks and a daily-refreshed minibar are included in the stay.
